Highfield Award in Food Allergen Management in Catering Level 3
This qualification is suitable for individuals responsible for the purchase, delivery, production and serving of food in the catering industry, as well as those who own/manage a small catering business.
The qualification is supported by Allergy UK, who regard it as suitable training for catering outlets wishing to apply for their Allergy Aware Scheme.
The training will include the manager’s role in ensuring that food ingredients and allergens are effectively managed, procedures relating to the communication of ingredient information from supplier to consumer, the importance of implementing controls to prevent contamination from the allergenic ingredients, and the methods for managing ingredients controls and procedures.
The course will be delivered in one day, at a venue confirmed upon booking, and will be assessed through a multiple-choice examination.
If a learner has additional learning needs, we will require at least six weeks’ notice to implement the required processes.
