Catering students and staff welcomed back catering alumni, Nick Jones, to the College to showcase his culinary skills to the catering students.
Nick, who started his journey at the College studying Level 1 Diploma in Introduction to Professional Cookery and finished at Level 3 Diploma in Advanced Professional Cookery (Kitchen and Larder), did a cooking demonstration with students through The Chefs’ Forum Academy.
The Chefs’ Forum enables catering colleges to access the content, chefs and framework of The Chefs’ Forum. They arrange a cooking demonstration by a professional chef at the College every Monday. The College have had many high profile cooks such as Hywel Griffiths, Head Chef at the Beach House Restaurant, and Dan Lee, Master Chef the Professionals Winner.
Nick Jones has worked at a luxury Cotswolds hotel, The Fish Hotel, and currently works at The Britannia Inn, a gourmet pub on Gower.
He remembers his time at the College fondly “I started to learn about knife skills and I fell in love with cooking, and could see my progression. I wish I’d listened more to the theory side, but even to this day the lecturers still offer their support and check in with me, 10 years on.”
He added “it’s nice to give back, and to help students progress with their learning.”
Catering lecturer, Ioan Lodwig, says “The hospitality department were delighted to have an ex-student return to College and demonstrate his dishes to current students. The Chefs’ Forum demonstrations open up a wide array of knowledge and cookery styles to students which will further enhance their learning and motivate them to achieve.”
He added “It’s been a thread of many of the Chef demonstrators that they encourage students of culinary craft to learn at every occasion and to seek knowledge, through practical or theory classes, to continually improve at every opportunity.”
“Nick Jones conveyed to current students that he appreciates the standard of education, teaching and skills that he received at the College and that those skills have stayed with him throughout his career. Nick Jones completed three successful years of education at the College, finishing by achieving his Level 3 Larder and Pastry course."
